The ability to email scanned documents directly should still be available in Scannable. After scanning your document, you will find a sharing option at the lower-right corner of the screen. Tapping this will bring up a menu that includes an option to send your scan via email. If you're not seeing this option, it may be a temporary issue or a bug. Try closing and reopening the app or checking if there's an update available for Scannable in your device's app store. If the problem persists, you may want to uninstall and reinstall the app.

Evernote's notes are not stored locally on your device, but rather on Evernote's servers. So if you've got a new iPhone, you simply need to download the Evernote app again and log in using your Evernote account credentials. Your notes won't be recovered from iCloud because they don't get saved there in the first place. Once you log in, your notes should sync and you should be able to access all of your previous notes as long as you have an internet connection.
