I bought a sharp xe-a207b cash register for my restaurant but how do i keep tabs open between different clerks?

This meansclerks can close their cash out at the end of their shift, but not hold partial transactions open for continuation by another clerk. Any ongoing tab should be properly settled by the clerk before their shift ends.
